Production & Craftsmanship

This mezcal is overseen by Maestro Mezcalero Enrique Jiménez, a fourth-generation producer who uses traditional Oaxacan methods:
  • Agave: Responsibly sourced wild Madrecuixe agave, typically harvested after 12 to 18 years of growth to ensure maximum sugar concentration.
  • Cooking: Agave hearts (piñas) are slow-roasted for five days in an underground earthen pit lined with volcanic rocks and heated by black oak.
  • Milling & Fermentation: The roasted agave is crushed using a traditional stone Tahona and fermented naturally with wild yeasts in open-top pine vats.
  • Distillation: Double-distilled in copper alembic stills
