A Perfect Pairing: Homemade Pasta and Red Wine
Ingredients:
- 2 cups all-purpose flour
- 3 large eggs
- A pinch of salt
- 1/2 tablespoon extra virgin olive oil
Instructions:
1. On a clean surface (or large bowl), make a mound with the flour and create a well in the center.2. Crack the eggs into the well and sprinkle with a pinch of salt, and add the olive oil.
3. With a fork, gradually incorporate the flour into the eggs until a dough forms.
4. Knead the dough for about 10 minutes until smooth, seal it airtight with saran wrap, then let it rest for 30 minutes at room temperature.
5. Roll out the dough and cut it into your desired pasta shape. You can use a pasta machine to help shape and roll your dough.
Cooking the Pasta:
1. Boil a pot of salted water.
2. Cook the pasta (we recommend in small batches) for 1.5 - 2 minutes or until al dente.
3. Drain and toss with your favorite sauce. Add a spring of basil for some decor! Some great side dishes are bruschetta, caprese salad, or garlic bread.
